“I’m so glad I live in a world where there are Octobers.” Aren’t you?
It gets me in the mood to make all things “comfort food” and get in the kitchen to do some fall baking. As a matter of fact, on Sunday, I’ll be posting a brand-new recipe for Pumpkin Muffins. The recipe uses a great little shortcut - a spiced cake mix! Stay tuned for that.
Now, back to the weekly meal plan. This week is a great group of recipes. With the exception of the crockpot recipe, you can have dinner on the table in less than 35 minutes!
There's a French Dip Sandwich that can be assembled ahead of time and baked when it's dinnertime and a Grilled Chicken Street Taco featuring a flavorful marinade, perfect for Taco Tuesday!
Let's talk about that Crockpot Pulled Pork recipe! It makes a lot so you can divide it into a couple of different meals. Once the pork is shredded, you can make barbecue sandwiches, wraps, tacos, or nachos. The possibilities are endless! Since it takes 8-10 hours on LOW to tenderize the pork shoulder, I often make this recipe on Sunday as my meal prep recipe and have it ready for quick meals during the week.

1 ½ cups cooked chopped chicken
1 can 10.5 ounces cream of chicken soup
¼ teaspoon poultry seasoning
salt and pepper to taste
¾ cup milk divided
1 cup biscuit mix such as Bisquick
1 egg
30-Minute Steak Stir Fry
For the marinade
6 tbsp soy sauce
2 tbsp sesame oil
2 tbsp brown sugar
1 tbsp fresh ginger
Stir Fry
2 lbs Beef Steak
1 red bell peppers
8 oz broccoli
1 medium onion
1/2 bunch green onions
2 tbsp oil, avocado, or olive
Grilled Chicken Street Tacos
For the Marinade:
4 Tablespoons orange juice
2 Tablespoons apple cider vinegar
1½ Tablespoons fresh lime juice
3 cloves garlic, minced
1½ Tablespoons chipotle chili powder
2 teaspoons dried Mexican oregano
2 teaspoons paprika
¼ teaspoon ground cinnamon
1 teaspoon kosher salt
freshly ground black pepper
For the Tacos:
1.5 pounds boneless skinless chicken thighs or breasts
24 white corn tortillas, warmed
2 cups Pico de gallo
1 /2 cup fresh cilantro, chopped
6 lime wedges
More optional toppings: guacamole, sour cream, pickled red onion, hot sauce
Crockpot Pulled Pork
4-6 pounds bone-in pork shoulder roast (or pork butt)
¼ cup store-bought or homemade pork rub; see recipe below
1 can Dr. Pepper (Coca-Cola or root beer work too)
1 Tablespoon hickory liquid smoke
1 bottle of your favorite BBQ sauce
Pork Rub
1 teaspoon garlic powder
1/2 teaspoon red pepper flakes
1/2 teaspoon paprika
1 teaspoon black pepper
1 teaspoon mustard powder
2 teaspoons salt
3 teaspoons brown sugar
